Roast garlic pâté
  • 2/3 garlic bulbs. Extra virgin olive oil.


1. Cut the base of the bulbs, no more than ½ centimeters. Oil this part with the extra virgin olive oil.
2. Place the garlic on a dish and roast garlic in 302F oven for about an hour. Cloves will begin to brown, remove dish from oven and squeeze garlic out of skins.
3. Mash together with a fork until the paste has a smooth consistency, add the extra virgin olive oil.

This roasted garlic paste is a wonderful spread for bread with red chili pepper. Use it to add rich flavor to soups, pastas, vegetable dips, or basted on meats.
